This recipe is perfect for making into homemade slice and bake cookies, but you can also divide the finished dough to make half into an immediate batch of cookies and turn the other half into a slice and bake tube for later use.  What You'll Need• 2 1/2 cups all-purpose flour • 1 teaspoon instant coffee granules • 1 teaspoon baking soda • 1 teaspoon salt • 1 cup salted butter, softened • 1 1/4 cup firmly packed brown sugar • 1/4 cup white granulated sugar • 2 whole eggs • 1 tablespoon pure vanilla extract • 2 tablespoons creamy peanut butter • 2 tablespoons chocolate hazelnut spread • 1/2 cup very finely chopped pecans • 3/4 cup M&Ms • Sharp knife • Large mixing bowl • Medium mixing bowl • Small bowl • Whisk • Rubber spatula • Plastic wrap • Baking sheet • Nonstick cooking spray • Sifter  What to Do• Sift the flour, baking soda, and salt into a large mixing bowl. Be sure to measure the ingredients prior to sifting • Add the instant coffee granules to the flour and use the whisk to incorporate them into the mixture • In the medium mixing bowl, cream together the soften butter and both the brown and white granulate sugars until light and fluffy • Break the eggs into the small bowl and use the whisk to beat lightly • Add half of the beaten eggs into the butter and use the rubber spatula to combine thoroughly • Add the rest of the eggs and combine • Add the pure vanilla extract, peanut butter, and chocolate hazelnut spread, and combine • Sprinkle 1/4 of the dry ingredients over the wet ingredients and combine • Continue adding the rest of the dry ingredients and mix gently after each increment to form a consistent dough • Stir in the chopped pecans • Use the sharp knife to roughly chop the M&Ms and mix in • Lay two pieces of plastic wrap out on a flat surface and spoon an equal amount of the dough onto each sheet in a line • Roll up the dough, pressing gently to create a firm log • Refrigerate for at least 4 hours, turning after the first 30 minutes to maintain the cylinder shape • When you are ready to bake the cookies, use the sharp knife to slice off as many cookies as you would like to bake, place them on a prepared baking sheet, and bake at 375 degrees for 10 minutes.   If you or an aging loved one are looking for home care services in Santa Cruz, CA, please call Familiar Surroundings Home Care.
